You can set staff be to be paid a percentage rather than a dollar amount in Studio. To set this, head to Settings > Staff > Click on the staff member you want to set it for.

Click Pay Rate > Select the rate you want to set > + Add new rate > Click percentage and enter the % you want them to be paid.
